White fungus is believed by the Chinese to be very
good for the health. Combined here with longan
and peaches, it makes a refreshing and healthy
end to any meal.
INGREDIENTS
20g dried white fungus
70g gula melaka
3 cups water
1 pandan leaf
20g canned ginkgo nuts, drained
and blanched
1/2 can Hosen Longan
4 Hosen Peaches Halves
Maraschino cherries, to garnish
HOW TO
1. Wash the fungus well, and then soak in warm
water for 1 hour. Remove any hard portions
and cut into bitesized pieces.
2. Heat gula melaka, water and
pandan leaf in a saucepan, stirring
until sugar dissolves.
3. Add all the other ingredients and simmer for
3 minutes. Before serving, garnish with maraschino
cherries.
SERVES: 2

minutes (excluding soaking time)
CHEF'S TIP
This dessert can also be served cold.
After cooking, leave to coot then chill
in the refrigerator.
